Whole Foods Market hopes to boost the number of locally grown organic food sources for its Midwestern stores through a program that offers loans to family farmers and artisanal producers. The food retail giant will lend up to $10 million nationwide to farmers "who are looking to expand production or move into this kind of niche," said Jim Slama, president of Sustain, the nonprofit organization that will administer the program in the Midwest.
Publix Super Markets promises "restaurant food without the wait," as one company official put it, at its new store opening next month in Lake Mary, Fla. Publix is testing a concept for delis that will compete with rival grocers and the restaurant carry-out business. The deli in Florida will cook to order Vietnamese Lemongrass Pork, oven-baked pizzas and other dishes ranging in cost from $7 to $11.
Danisco researchers have cultivated a bacteria essential in cheesemaking that will fight off viral phages, which attack foods and are one of the major causes of product failure in the food industry, one scientist said.
