Lactalis and the Isigny Sainte-Mere cooperative, two of France's largest dairy farms, have changed the way they use milk in Camembert cheese -- and now they want the same Camembert status as more traditional cheese makers. Francois Durand, who makes Camembert on his 200-acre dairy farm, is one of the traditionalists who opposes new rules and methods for Camembert.
