Dreyer's Grand Ice Cream is credited with pioneering slow-churned light ice cream technology in 2004, and companies including Velvet Ice Cream have experienced steady increases of reduced-fat ice cream sales following the technology's introduction. The last two years have seen significant growth in the reduced-fat ice cream category, said Marti Pupillo of the IDFA, adding that reduced-fat ice cream production has increased by 18%.
