Publix Super Markets has entered the meal-preparation arena by opening its first Apron's Make-Ahead Meals location in Jacksonville, Fla. "Our competitors aren't just other supermarkets anymore," said Shelly Carroll, director of Publix's meals and cooking school programs. "They're restaurants, they're meal-assembly stores. We want to keep Publix on top of customers' minds." Revenues in the meal-preparation industry should pass $1 billion by 2010, according to MealPreparationFranchises.com.
