Classic fondue uses equal amounts of Gruyere cheese and Emmenthaler, along with kirsch and a bit of garlic. But newer forms of the classic cheese dip are more creative, using cheddar cheese and Irish whiskey or Stilton cheese with a Sauterne. One cook experiments with ingredients ranging from pickle and fennel to truffle oil or caramelized onions to add an innovative kick to the dish.
