Celiac patients have struggled in the past to find good gluten-free foods or food ingredients, so the new-found attention to their disease has paid off by turning a niche issue into a mainstream market sector. Many more groceries, restaurants and health food stores now cater to people on a gluten-free diet. The market for gluten-free products is expected to grow 15% to 25% a year.
