Health is the driver for most trends in the natural and organic categories, according to Christie Wood, culinary strategist for the Sterling-Rice Group, which just released a report on the topic. "Everything we identified has the potential to manifest in mainstream products," Wood said. Trends include lentils, which are a good source of plant-based protein; prebiotics and probiotics; beets; grain-based beverages such as quinoa smoothies and multigrain milk; and bee-free honey.
