It took several tries to create a meatloaf with consistent flavor, moistness, a burnished crust and a sweet glaze. Tricks include using a panade of milk and saltines, and broiling the meatloaf before adding the glaze.
Chefs and sustainable-food producers came together at the first meeting of the 2009 Grow-out project in New Hampshire. "Our goals are to raise awareness of the issues surrounding heirloom vegetables, build markets, and with this pilot project, build a template to do similar things throughout the country," a coordinator said.
