A study of 25,000 men and women found a lower risk of gallstone development among those who consumed moderate amounts of alcohol. The researchers said alcohol might reduce cholesterol in the bile from which gallstones form, but they said more examination is needed.

Researchers say collagen peptides made from bovine gelatin can lead the way to new ice cream formulations by eliminating ice crystals in supercooled ice cream. The protein is said to bind to the surface of ice, keeping crystals from developing.
