With consumers increasingly concerned about the caloric punch of their favorite drinks, beverage manufacturers are challenged to reduce sugar and fat without upsetting the balance of flavors and decreasing palatability. "Sugar is very clean tasting, with a rapid onset, no off tastes, and limited lingering sweetness," said Greg Horn of Wild Flavors Inc. "Sucrose also adds mouth-feel to beverages because it can structure water and provide body to the beverage."
