Young butchers working out of boutique shops are the hottest celebrities on today's food scene. "There's a macho performal nature that some of these people crave," said Tamar Adler, who teaches butchery to some of the growing number of youthful aspirants. "And what better a performance than the blood and guts of butchery?"
