In a 1991 New York Times column by Barbara Kafka, she set out to uncover cold soups. One she loved was Moroccan tomato soup, which included cumin, cayenne, garlic, cilantro and lemon juice, in addition to sweet tomatoes. Though prepared using heat from a stove, it is served chilled.
