Ezio Santin, head chef at Antica Osteria del Ponte near Milan, rejected his Michelin stars, after Gualtiero Marchesi rejected a coveted three stars last year. Santin said he can attract customers without the stars and after 33 years in business, he and his wife, Renata, want "the freedom to cook what we like" without worrying about inspectors.
