Lasagna made with salt substitutes and lower sodium levels beat lasagna with higher salt levels in consumer taste tests. Scientists lowered the salt by as much as 29% using substitutes such as potassium chloride.
The Winter Fancy Food Show in San Francisco featured some 80,000 specialty food and beverage products. Based on what was shown, trends in the industry include foods made with coconut or exotic citrus, as well as products that are gluten-free, better-for-you or nostalgic.
Wegmans has introduced a line of private-label mixed frozen vegetables, Wegmans' Special Blends. Varieties include a grilled vegetable mix and a blend of broccoli, cauliflower and pine nuts with olive oil, garlic and an herb sauce.
