A wide, flat hamburger known as a pljeskavica is popular throughout the Balkan region and is gaining a following in Europe and the U.S. Though variations abound, they all contain ground meat and onion, pounded thin and grilled on both sides.
Hotel dining rooms, once the height of luxury, are again becoming dining destinations. In many cases, the restaurants play down their relationship to the hotel, often situating the entrance at street level.
Chefs at upscale restaurants are serving interpretations of the classic breakfast meal of biscuits and sausage gravy. At Charlie Palmer, Scott Romano created an elegant version featuring a delicate biscuit, house-made sausage and silky gravy.
