In a quest to find the perfect combination of classic cocktails and classic hotel lounges that once were many hotels' signature attraction, a reporter finds disappointing results at some of Chicago's most famous hotel bars. The request for traditional Tom Collins largely produces various concoctions made with premade Collins mix and served in inappropriate glasses. But NoMI Lounge at the Park Hyatt Chicago and the Renaissance Chicago's Bar Novo, which uses a mixology consultant, passed the test with a well-made cocktail.
