Chef Linton Hopkins offered less-traditional ideas for strawberries, including roasted strawberries and a preserve of strawberry and fennel. Another idea is a salad of strawberries, shrimp and country ham, with pesto and a citrus vinaigrette.
American lamb is popping up on menus nationwide, fueled by interest in local food. The old image of lamb as fussy and dated is being shaken up as chefs experiment with less-popular cuts and craft dishes such as lamb bacon.
Tuna sushi served in high-end restaurants has higher mercury levels than similar fare purchased at a supermarket, a study found. That's because the species that restaurants value for their visual appeal and firm texture tend to have higher mercury levels, the researchers say.
Daniel Johnnes and Bernie Sun, wine directors for major restaurant groups, says they look for sommeliers who present themselves well, have strong wine knowledge and don't jump from job to job. "I've interviewed food and beverage managers who have had many years in the business and who still can't tell me that Chardonnay is the primary white grape of Burgundy," said Sun.
