Oregon's Rogue Creamery has added a 5-pound wheel to its line of blue cheeses. "This is the blue that we set out to make in 2002, to represent the new generation," co-owner David Gremmels said of Caveman Blue. Produced with raw organic cow's milk, the cheese required a separate aging facility with precise temperature and humidity levels to develop its distinctive rind.
