Taking capsules of concentrated fruits and vegetables could lower levels of some inflammatory markers by 16% to 35%, according to a study in Molecular Nutrition & Food Research. Researchers also found elevated levels of micronutrients, as measured by beta-carotene, vitamin C and alpha-tocopherol, in study participants who took took the fruit and vegetable capsules.
