Rory Golden, executive chef of Deerhurst Resort in Ontario, said he has been planning for more than a year and is ready to provide food for the 1,500 people who will arrive for the G-8 summit this weekend. "For the G-8 it is all about the Muskoka experience," he said of the municipality. "I hope to annotate the menus with the origin of the local food."
Chefs in and around Baltimore are starting rooftop gardens that provide tomatoes and other produce for their restaurants. At Regi's American Bistro, chefs pick heirloom tomatoes that grow in pots on the roof, and Jack's Bistro offers a gazpacho made with "rooftop onions."
Nantucket, a summer destination with more than 80 restaurants and a popular wine festival, is popular with Boston chefs. But they note that working during the bustling vacation season is challenging and hectic.
The dumplings known as mandu in South Korea can be made with vegetarian or meat fillings, and can be grilled, fried or stewed. "There's no right recipe, and no right amount of anything," said Bockhee Lee, who continues a mandu-making tradition that stretches for generations. "Use the most of what you love most."
