A growing number of health-conscious consumers are joining their vegetarian peers in eating meatless meals more often. Cheese, seasonings and the current generation of veggie burgers make it easier for eateries to create palate-pleasing dishes without meat, writes Marc Halperin, chief operating officer and culinary director at San Francisco's Center for Culinary Development.
