More state legislatures are drafting exemptions for vendors who sell their local fare, including jams and baked goods, at farmers markets. In Maine, small chicken farmers can now sell slaughtered chickens without inspections.
Daniel Patterson, chef and owner of Coi in San Francisco, is sharing his passion for local ingredients by whipping up dishes made from foraged foods such as seaweed, wood sorrel, roots and bark. "It's about cooking with wild ingredients in the hopes that it can encourage local cooks, both professional chefs and home cooks to bring these flavors back into the kitchen," Patterson said.
Registered dietitian Joanne Hutson says constant eating is a major part of the U.S. obesity problem. Other dietitians say that skipping meals and opting for snacks during the day can lead to overeating later, as well as a diet lacking in the proper nutrients.
