Foraging for ingredients has become a habit for London sous chef Johnny Willetts, who regularly takes a break from his bike ride to snip honeysuckle, wood sorrel and other wild-growing vegetation for use in the kitchen at Viajante. He's not alone -- a growing number of European chefs are taking local sourcing to the next level, combing woods and parks for edible ingredients.
