Lyndon Espiritu, assistant director of Nutrition and Food Service at Glen Cove Hospital in New York, cooked up Peruvian pork tenderloin with avocado chili sauce to win the Premier Healthcare Alliance's 2010 Culinary Creations Award. He says he creates recipes from random visions, thoughts, mental images and scents.
