Fried-chicken chain Popeyes has seen its fortunes rise during the downturn, even as competitor KFC's sales have waned, writes BNET's Carol Tice. The smaller competitor is winning through a combined strategy of innovating by building on core fried-chicken products, marketing with a consistent message and avoiding overexposure by limiting the number of new stores.
