U.S. researchers found that among more than 3,500 adults participating in a long-term study, the incidence of celiac disease doubled every 15 years since 1974, with data indicating that celiac cases increased as people aged. The finding suggests that environmental factors and changes in gut bacteria may influence the development of gluten sensitivity later in life, a researcher said.
