Only 12% of Americans eat dessert with dinner at home, a drop from 15% 10 years ago and 24% in 1986, according to research firm NPD.
"The trend in American homes is about one-dish meals. Americans have been steadily cutting back the number of items served at a main meal and dessert ranks 4th on the list for a meal after the main dish, vegetable and starch," says NPD's Harry Balzer. "Having dessert makes the whole meal more complicated."
A Community Food Assessment on Humboldt County, Calif., found policies are needed to address access and affordability issues. The goal is to create a local food policy council and bring together different groups, such as farmers, schools and food banks, to make changes to help ensure food security.
Vanderbilt University Medical Center in Nashville is ending its contract with McDonald's and going with Au Bon Pain in a move to expand healthy food options and nutritional awareness. The hospital asked 20 vendors to submit proposals, which were rated on the ability to handle the volume of business generated by the facility, offer the healthiest food options and provide nutritional information.
The Chinese dish known as congee is little more than rice and water boiled to a creamy consistency, which serves as a bland base for ingredients including shrimp, duck, ginger and mushrooms. Garnishes can include scallions, cilantro and salted chiles.
