Scotland's leading independent dairy, Graham's, will acquire Claymore Dairies, maker of Highland Fresh products. Graham's makes branded and own-label products, and supplies Sainsbury's and other supermarket chains.
Yumnuts Naturals has been launched in Connecticut, selling chocolate-covered nuts. "We wanted to create a healthy nut snack with just enough sweetness," said one of the founders, Tyler Ricks, former general manager for Bear Naked granola.
Mark Haub, a nutrition professor at Kansas State University, will eat high-fat snacks for a month to prove specific foods or drinks are not to blame for weight gain. He expects his weight to drop since he will restrict his calories to 1,800 a day.
Three Columbia University graduates have formed Chocomize, an online store that lets customers create their own chocolate bars from a range of ingredient choices. The entrepreneurs have sold about 50,000 bars since launching in November.
Leatherhead, a food research group, has begun testing natural food colors to see if they can be used in beverage and confectionery applications. "What we're looking for is to be able to make a rapid assessment of what a product's shelf life will be when using a particular [color]," a company official explained.
