Some restaurateurs are once again in expansion mode, buoyed by a greater ability to find financing. Pittsburgh-area Qdoba franchisee Chad Brooks just opened his first new store since 2008 and has plans in the works for others; Quaker Steak & Lube recently revealed plans for 16 new locations in New York and New England; and California Pizza Kitchen is scouting for sites as it heads back into growth mode.
