Fast-casual eateries can never match the speed of quickserves when it comes to serving breakfast, but eateries that attract morning guests have an opportunity to build return breakfast business, writes Bread & Co. VP George Green. Several years ago, Bread & Co. boosted flagging breakfast sales during the height of the high-protein Atkins craze with new omelet offerings and other egg dishes, a move that's still paying off with strong breakfast sales.
