The just-released U.K. version of Michelin Guide 2011 highlights the increasing influence of female chefs in the country's upscale restaurants. While still in the minority, women have made great strides in earning stars for their eateries and improving the fare. "Women are cooking in two and three-star restaurants. More and more women are coming into the industry and reaching the very top. You sometimes can really detect a lightness of touch with a female chef," said Derek Bulmer, who has edited the guide for 33 years.
