Most Americans don't like the taste and texture of liver and, while U.S. cattle ranches produce a hefty amount of the organ meat, the lion's share gets shipped overseas. In restaurant markets in parts of the U.S. and Canada, fans are finding each other and creating liver-focused dining clubs. In Stanwood, Iowa, members of Ditto's Liver and Onion Club meet on the first Monday of each month to enjoy the $5.75 liver special at Ditto's Family Restaurant.
