This year's list of 55 insights includes a sense that operators are still cautious but more optimistic than they were in 2010, although many are still not spending on staffing and training like they did before the recession. Also noted: Chicken is taking the place of pricier meats on many menus, and fried foods are less prominent than they used to be.
