Tilted Kilt has been succeeding in a down market because guests like the differences that make it stand out from the crowded field of sports bars and pubs, says President Ron Lynch. The chain, which will have 72 franchises up and running by summer's end, updates the menu often with healthier fare, and it's the food as much as the scantily clad servers that keep business booming, he says.
