Moe's Southwest Grill is opening about one new restaurant every week -- a breakneck pace that makes it hard to qualify new owner/operators, according to President Paul Damico. Many would-be franchisees have the financial wherewithal to open a store but lack any background in the restaurant business. So Damico and his team created an internship program, where borderline franchisees work through every position "from cleaning bathrooms to rolling burritos to serving guests," all without pay. Successful interns earn their own franchise and "begin the process of becoming an entrepreneur."
