Three chefs from upscale Los Angeles-area eateries accepted a recent challenge to cut fat, calories and salt from one of their upscale restaurant dishes without noticeably affecting the taste. Diners judged the dishes against the original version in a side-by-side blind taste test, and in each case testers noticed slight differences but found they enjoyed the healthier version just as much as the higher-calorie dish.
