Jeff Mahin, chef and partner of Stella Rossa Pizza Bar in Santa Monica, Calif., said cooking in winter takes "a bit more time and creativity" compared with summer, when "everything is so fresh and vibrant, so full of life, it’s relatively easy to put a small finishing touch on something and call it amazing." One dish he's planning to serve in cooler weather is roasted cauliflower with dates, chilies and a vinaigrette with chard and tomato.
