Emerson Family School in Starkville, Miss., will be cooking from scratch using fresh, local produce as part of the Fresh Start Campaign, which was championed by parents who were worried their preschoolers were getting too much processed food. At least one farmer will sell produce to the school for cost. Parent Clemence Bouvard says teaching young children to make healthy food choices "will impact their eating behavior in a positive way for the rest of their life."
