Participants who consumed a beverage enriched with 3 to 6 grams of barley fiber attained a 10% reduction in blood glucose, compared with a 7.5% increase for a placebo group, and an 8% decrease in fasting insulin, compared with a slight increase in those who took placebo, a study in Nutrition and Metabolism showed. Researchers also noted a decrease in insulin resistance in those who had the barley-enriched drink.
