Going gluten-free is a necessity for those with celiac disease, but it is not a weight-loss diet, nutrition experts said. Registered dietitian Karen Ansel of the American Dietetic Association said nothing in gluten makes people gain weight, but refined carbohydrates do. She advised people to choose small portions of healthier, unrefined carbohydrates such as whole wheat and whole grains.
