Restaurants in all 50 states will participate in Food Day 2011 later this month, with many offering special menus and community events intended to boost awareness of healthy eating and environmental best practices. Organizers didn't set out strict rules but have encouraged restaurants to offer menus with sustainable, local, healthful meals and at least a few plant-based dishes. "We do need to start a dialogue with restaurateurs, make sure they know that people want to eat healthier and more locally sourced items," national campaign manager Jennifer Tuttle said.
