Many students at some Texas schools are choosing not to eat the two or more servings of fruits and vegetables available at every school meal. In Abilene, officials have tried various ways to introduce more healthy foods into students' diets, including a salad bar -- which eventually became too costly because the school threw lots of leftover produce. Officials say students are most likely to eat fruits and vegetables when they are served fresh and prepared in different ways.
