Chef and food writer Kim O'Donnel writes that 2012 could be the Year of the Bean, when people resolve to eat the recommended three half-cup servings per week of cholesterol-free and nutrient-rich beans, peas or lentils. Buying dried beans is best, although they may require soaking before cooking, but canned beans are OK as long as they are not too high in sodium.
