Chinese food has long been popular with American consumers, Japanese and Thai dishes are increasingly prominent on quickservice and fast-casual menus, and a number of new Asian cuisines are gaining traction, experts say. "People perceive Asian cuisine as a better way of eating and [as] more healthful, because it has less red meat and more noodles, rice and vegetables," said consultant Arnold Shain.
