Students at six schools in Texas are receiving prompts in the cafeteria as part of a study to determine whether "low- or no-cost nudges" can encourage students to eat more fruits and vegetables, writes Bettina Elias Siegel, who serves on Houston Independent School District's Food Service Parent Advisory Committee. The prompts include encouragement from school-nutrition professionals to select certain foods, and there will be signs about the targeted foods. Teachers also embed the messages in classroom lessons. In May, researchers will determine whether the messages led to increased consumption of fruits and vegetables.
