The Manatee County School District in Florida is preparing for the new federal school nutrition standards, said Sandy Ford, the district's food and nutrition director. "It really does mean the child will have to take a fruit or vegetable they may not eat," she said of a requirement that students are served a vegetable or fruit at lunch. Ford, who in July becomes president of the School Nutrition Association, and other officials expect food vendors to take time to adjust to the new requirements, such as the increase in whole grain offerings.
