Panda Express grew to become a staple of mall food courts, but now the chain is expanding to stand-alone stores and continually reworking its menu to keep up with the latest trends in Asian cuisine, with an emphasis on healthy offerings. "Before, I just gave customers a big chunk of meat. Now I need to make sure [the] nutrition's good," says Andy Kao, the chain's head chef for 28 years.
