Chef Morgan Robinson left a position as a winery chef in Napa Valley, Calif., to start Smoke, a catering company dedicated to serving fare cooked over an open fire to large parties. Robinson sources all his ingredients from local producers and uses an outdoor grill with a trailer hitch and an indoor wood-burning smoker oven to create oven-baked pizzas and smoked meats.
Panera Bread's founder and executive chairman Ron Shaich has taken on the title of co-CEO, which he'll share with current president and CEO Bill Moreton. Moreton, who was named CEO of the St. Louis-based fast-casual chain in 2009, will also retain his role as president, the company said.
