A study of overweight black adults revealed that those who carry a specific gene variant of the CD36 fat receptor were able to determine the creaminess and fattiness of salad dressings, but were less able to distinguish high-fat dressings from low-fat varieties. The results suggest slight differences in the genetic makeup of fat receptors may result in varied perception and intake of fatty foods, researchers reported in Obesity.
