The fructokinase C and fructokinase A enzymes -- with the former causing fatty liver, obesity and insulin resistance and the latter protecting against them -- appear to play a role in fructose metabolism, according to a study in the Proceedings of the National Academy of Sciences. The findings shed light on how a high-fructose diet may contribute to obesity and diabetes, study authors said.
